Arsenal lost Nicklas Bendtner for a bad foul, and Everton had Mikel Arteta dismissed when his arm caught Cesc Fabregas in the face.
Everton had led at the break through a Tim Cahill goal, but two efforts from Brazilian striker Eduardo, a third from substitute Emmanuel Adebayor and an injury-time fourth from Tomas Rosicky saw the Gunners home.
