It will offer everything from sundaes and shakes to cookies and crepes, all of which can be delivered until after 10pm at night.

Yusuf Lambat launched the business after a family holiday to Italy and is opening a new shop in the food hall at The Mall in Blackburn.

And, as part of the expansion, he has taken on three apprentices.

Yusuf was referred to Lancashire Apprenticeship Hub by the National Apprenticeship Service after asking about mentoring training for himself.

Yusuf and his shop supervisor Bushra Bibi signed up for Lancashire Apprenticeship Hub’s Institute of Leadership and Management (ILM) level two, introduction to mentoring skills course.

They both completed their qualification, which is part-funded through the European Social Fund and co-financed by the Skills Funding Agency, within two months.

Bushra was in fact the first mentor to get her certificate.

Yusuf said: “The mentor training that we have undertaken has helped develop our staff and improve our business.

“It helps with our recruitment and particularly with staff commitment.

“The main difference we have noticed in the way we work now is that everything is documented and policies have been put in place, helping staff to develop.

“Lancashire Apprenticeship Hub has supported us a lot and still is doing so in terms of pointing us in the right direction to help us to get the right staff and get the best of out those staff.”

The Hub is a pilot project which is due to end in July.
